Domaine Saint Sylvestre is located in Puéchabon, small village at the north of Aniane at an altitude of 320m.The vineyard is around the country church Saint Sylvestre des Brousses de Montcalmès (Romanesque style from the twelfth century) . It’s the first place where the vine was planted in Puéchabon.
The wine estate has the particularity to have 3 plots inside the woods whose two “Défriches” (The land composed of oak was clear to grow the vines)
Sophie & Vincent Guizard are looking after 8 hectares of vines in the Appellation Languedoc Terrasses du Larzac. Wonderful landscapes, a splendid Terroir, an old know-how, a passion, are the secret of Domaine Saint Sylvestre Wines.

Winemakers, a family story…

 

Vincent Guizard learnt early with his grandfather how to cultivate the vines. Olivier Jullien (Mas Jullien-Joncquières) taught to Vincent Guizard how to elaborate wines in1998 & 1999. Vincent was during 7 years the associate of Frédéric Pourtalié at Domaine de Montcalmès (from 2003 to 2010). The 31 october of 2010, he left Domaine de Montcalmès with his 6 hectares of vines (The plots: Défriche de Blanc, Défriche”de rouges “le Fon de la Coste).He has create with his wife Sophie Domaine Saint Sylvestre the 1st of December 2010.
Sophie learnt early with her grandfather and her father how to cultivate vines. She decided to specialise in export wine sales (BTS Technico-Commercial beverages, wines & spirituous, Licence of International Wines Sales). She has lived one year in London, to sell Loire Valley Wines before to come back in Languedoc to join Vincent. She have pass the Wset level 2.Vintage 2011 was their first common vinification, the14th for Vincent & the 6 th for Sophie.Together, they aim to share their passion that they try to transmit to their daughter.

Because we want to preserve environment, we work as « reasoned agriculture ». We work as follow by hand: pre-pruning, short cane pruning, trellising and disbbuding. Between june & july, green harvest takes place (to obtain a yield around 20 hl/ha). We harvest by hand, with selective picking of the more qualitative grapes on the vine trunk.

 

Grape Variety & Terroir

The red Wine called Domaine Saint Sylvestre red is a blending of Syrah, Grenache and Mourvedre.
The largest plot called “Défriche de Rouges”, was the setup project in agriculture of Vincent in 2000. Planted on hillsides impressive rolled pebbles between 2000 and 2003, it’s Terroir is the same than Chateauneuf-du-Pape, facing southeast. Syrah, Grenache and Mourvèdre are giving their best on it.
The plot called “Saint Sylvestre” was planted in 1993. Syrah and Grenache grow on rolled pebbles soil, exposed Southeast.The plot called “Fon de la Coste” dates from 1989, on a calcareous clay hillside dotted of rolled pebbles, exposed North West.The plot called “Défriche de Blancs” was planted in 2007 with Chardonnay, Roussanne, Marsanne .It’s a hillside composed of limestone lacustre, exposed east.

Because we want to preserve environment, we work as « reasoned agriculture ».Finesse and elegance is the common point between Sophie & Vincent’s wines. These wines will seduce you both in their early age and with a few years of keeping for the most patients.
Domaine Saint Sylvestre White: 45% Marsanne, 45% Rousanne, 10% Viognier in AOP Languedoc.
Le Coup de Calcaire White: 90% Chardonnay, 5% Marsanne and 5% Rousanne, Pays d’Oc IGP.
Domaine Saint Sylvestre Red: 70% Syrah, 20% Grenache, 10% Mourvedre AOP Terrasses du Larzac.
The vinification of the red wines takes place traditionally, with the particularity to use the natural yeast of the grapes, and to vinify each grape variety & plot separately. We tread the cap by foot, with pumping over depending of the vintage, long vatting time (30-40 days). The ageing of the wine takes place during 24 months in french Burgundy traditional barrels (barrels from one wine & more). The ageing is done by grape variety & by plot.To elaborate the white wines, we harvest by grape variety, the pressing is done by grape variety, we blend the grape varieties. The vinification takes place in oak with the wild yeast of the berries. They are then ageing for 12 months in oak.The final blend is done 3 months before the bottling the wine (depending of the moon).
